Whether you’re the type to bound out of bed in the morning, or the type to crawl out kicking and screaming internally, knowing you have a tasty breakfast waiting for you sure does make it a hell of a lot more enjoyable to start the day.
As stupendously delicious as this recipe is as it is, it also makes for a good starting point for plenty of variations. Experiment with your own combo of ingredients until you come up with your ‘bound out of bed’ ultimate.
Switch out the nuts and seeds for any others you like, such as pecans, walnuts, macadamias, sesame seeds or sunflower seeds. Add in some cinnamon, vanilla or citrus zest. Throw in some dried fruit after baking. Or, for a little (yet, healthy) breakfast indulgence, mix a 1/2 cup of raw cacao powder in well before baking.
2 cups rolled oats
2 cups buckwheat
1 1/2 cups coconut flakes
1/2 cup raw almonds, chopped
1/2 cup raw hazelnuts, chopped
1/3 cup chia seeds
1/3 cup flaxseeds
1/2 tsp Himalayan salt or sea salt
1/2 cup coconut oil
1/2 cup maple syrup
Preheat oven to 180°C. In a small saucepan over low heat, warm up maple syrup and coconut oil together and stir to combine.
In a large bowl, mix all dry ingredients together. Pour maple syrup and oil mixture into the bowl and stir to combine until the dry mixture is evenly coated. Pour onto baking sheets and spread mixture out.
Bake for 25-35 minutes or until golden, checking every approximately every 10 minutes to stir and redistribute mix to ensure it bakes evenly. Leave to cool and store in an airtight container.
