At Cali HQ, we’ve been working our fruity butts off in preparation for the fast approaching summer season. With a bit of trial and error and maybe a little taste testing (guilty!) we’ve improved on some old faves but we’ve also created some super fresh, ‘n’ super clean newbies we know you’re going to love. It was no coincidence that our first Cali Cafe was borne into the beachside suburb of Bronte. For us at Cali, Bronte has it all – cafes, sheltered natural rock pools, a wide and grassy park and of course – the beach… tis’ a true, local hangout, all year long. Butternut pumpkin pasta has long been a staple during the winter months and despite the visuals that spring to mind (Mmmm butter!) this is not a sauce-heavy pasta. In fact, the thing we love most about this dish is that it’s so damn tasty you don’t even miss all that sauce! The whole wheat flavour of the pasta balances perfectly with the roasted pumpkin and salty overtones of cheese, making this meal absolutely delicious! With the weather being so wiley as of late, admittedly we have spent a bit of extra time indoors. Luckily, our love of healthy comfort food lead us right to this amazing recipe by certified nutritionist Jacqueline Alwill of The Brown Paper Bag. This healthy take on the classic, homemade Chilli Con Carne is the definition of comfort food AND it’s so damn healthy; high in fibre, protein (and it’s meat free), vitamins, minerals AND low in saturated fat, this recipe is a dead-set winner. We recommend enjoying with guacamole, fresh lime, coriander and sweet potato wedges to add the Californian touch. Enjoy!
