Our baristas are a huge part of the Cali Press family, they make sure our coffee is expertly prepared with attention to detail so you get that perfect cup every single time. So often our customers ask our baristas, “what’s the secret”? That’s why we conducted an interview with the Manager of Cali Press Bondi and an outstanding barista in his own right, our very own, Ricky Recalcati.  

HOW LONG HAVE YOU BEEN MANAGING CALI PRESS BONDI?

Just over a year at Cali Press.

WHAT’S YOUR FAVOURITE PART OF THE JOB?

My favourite part would definitely be how rewarding it is when the customers come back. It’s nice to know that people like the service and their coffee enough to come back again. So that’s probably what I enjoy the most.

WORD IS THAT THE BONDI CAFE HOLDS THE RECORD FOR MOST COFFEES MADE IN A DAY AT A CALI PRESS CAFE – WHATS THE SECRET?

What’s the secret? It’d have to be my colleagues. It’s all thanks to them and their hard work. They’re all really nice people.

WHY ARE YOU PASSIONATE ABOUT COFFEE?

I have always liked making coffee. When I lived in Italy I was a barista and cafe Manager so I guess it all began there. When I came to Sydney and was looking for a job, I began practising my coffee skills even more, just every day and I tried to be as professional as I could, as often as I could. Then I got a job! Working in a cafe environment is something that I genuinely like to do everyday, so I guess it doesn’t even feel like a job! It’s pretty much my day off even when I am working.

WHY IS CALI PRESS COFFEE BETTER THAN OTHER CAFE’S YOU’VE WORKED AT?

We use a very good brand – Allpress, which is very renowned in Sydney. The coffee beans are very consistent throughout the year and also the fact we have very good baristas in all of the Cali Press cafes, so that makes a big difference as well.

DO YOU GET AROUND LATTE ART?

Yeah! I try! I like to put challenges to our baristas with coffee art; it can get competitive but is always good fun.

DO YOU THINK THERE IS SUCH THING AS A BONDI HIPSTER?

Not really. Maybe there was a few years ago I guess… but I don’t know. I live in Bondi, I work in Bondi and I feel like there is more of a ‘Bondi Bubble’ rather than the whole ‘Bondi Hipster’ thing. People can get creative with their coffee but I like that.

HOW MANY COFFEES DO YOU DRINK EACH DAY AND WHAT’S YOUR GO TO?

I try to stick to three maximum! But it’s always espressos. I only drink espressos and never have my coffee with milk. When I start work, I will usually have 2-3 cups in the first hour and then that’ll be enough to get me through the entire day.

WHAT DO YOU LOVE MOST ABOUT BONDI?

I guess the lifestyle. People are very relaxed and very nice. And then of course it’s great to be able to finish work and just walk to the beach. It’s completely different from working in the city, I don’t know, I don’t think I could ever try and work in the city now that I’ve worked at the beach.

DO YOU HAVE A MESSAGE FOR ALL YOUR CUSTOMERS / “THE LADIES”?

The ladies! (Laughs) Well, to the ladies I will say that we always put as much love as possible into every cup and if they ever want a free kiss, they can have that too.
