Why do we juice the watermelon rind? We’re happy you asked! While the flesh of the watermelon is juicy and delicious the rind contains most of the nutritional benefits. One of the more unusual aspects of watermelon is it’s rich supply of the amino acid, citrulline. Citrulline is commonly converted by our kidneys and other organ systems in arginine, another amino acid.

An enzyme called nitric oxide synthase (NOS) – which is found in many of our body’s cell types is able to use the amino acid arginine to produce a small molecule of gas called nitric oxide (NO), which is a muscle relaxant. When the NO tells muscles around our blood vessels to relax, the space inside our blood vessels can expand, allowing blood to flow more freely and creating a drop in blood pressure.

This relaxation of muscle, combined with the increased blood flow is also the way that NO can change erectile function in men. The prescription medication Viagra works in this way, which is why watermelon rind is commonly referred to as ‘natures Viagra’.
